There are few theories as to how our eyes work. One is called the Opponent Process Theory and it basically says your eyes can see either red or green and yellow or blue. Only one of each. That’s part of it. The other part of it is that your brain basically expects the photo to be in color so it fills in the gap. It’s really interesting stuff.
